this tiramisu recipe is great when you're craving something rich, indulgant and you want it fast! i made myself a healthy sized bowl of this coffee goodness and then portioned out several other individual bowls to hand off to my neighbors. never underestimate the thoughfulness of giving food. who doesn't like when dessert finds its way to their doorstep?
prep time: 20 mins
ingredients:
- 6 egg yolks
- 1/4 cup sugar
- 1/2 cup kahlua
- 1-1/2 cups brewed espresso (i use instant espresso)
- (4) 4 oz cartons marscapone cheese
- 2 packages stella doro cookies (or other ladyfingers)
- 1 package tiny bittersweet morsels
on high setting of a stand up mixer, whisk egg yolks and sugar until very thick, about 5 minutes. lower speed to medium and add 1/4 cup kahlua, 1/4 cup of espresso and marscapone until smooth.
combine the remaining kahlua and espresso in a shallow bowl. dunk your ladyfingers ribbed side down into the coffee mixture and begin to line the bottom of your serving dish. once you've smooshed enough ladyfingers into bottom of the dish to make a layer (crumble 1 or 2 of the cookies to make a flat layer if you're using a round serving dish rather than a rectangular one), spoon in a thick layer of the egg mixture. sprinkle with a layer of morsels. repeat cookie layer, then egg mixture layer again and finally top with morsels.
