long day = light salad

citrusy arugula salad


if you read my travel page, you saw the crazy amount of food i ingested this past weekend.  i needed something light and refreshing for dinner tonight.  and since i didn't get around to opening the fridge until about 9, it needed to be quick.  this salad was citrusy, refreshing and had a bit of a snap from the minced ginger.  just a few simple ingredients required and there were hardly any dirty dishes at the end!

prep time:10 mins
ingredients:
salad
  • 2-1/2 oz arugula (half a container full)
  • 2 tablespoons sea salted shelled edamame
  • 1 orange, segmented
  • lo mein crunchy noodles
dressing
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon honey
  • 1/2 teaspoon minced ginger (jarred)
  • 1-1/2 tablespoons olive oil
  • 1-1/2 tablespoons fresh squeezed orange juice (from leftover segments)
  • salt & pepper to taste
cut both ends of the orange and slice off the rind.  segment the orange slices and set aside. squeeze juice from leftover segments into a small dish and mix remainder of ingredients in to make dressing. 

next add your arugula, edamame and oranges to a large bowl.  toss with the dressing and taste to see if you need to adjust seasoning.  plate the dish and top with crunchy lo mein noodles.
