citrusy arugula salad |
if you read my travel page, you saw the crazy amount of food i ingested this past weekend. i needed something light and refreshing for dinner tonight. and since i didn't get around to opening the fridge until about 9, it needed to be quick. this salad was citrusy, refreshing and had a bit of a snap from the minced ginger. just a few simple ingredients required and there were hardly any dirty dishes at the end!

ingredients:
salad
- 2-1/2 oz arugula (half a container full)
- 2 tablespoons sea salted shelled edamame
- 1 orange, segmented
- lo mein crunchy noodles
- 1/2 teaspoon balsamic vinegar
- 1/2 teaspoon honey
- 1/2 teaspoon minced ginger (jarred)
- 1-1/2 tablespoons olive oil
- 1-1/2 tablespoons fresh squeezed orange juice (from leftover segments)
- salt & pepper to taste
next add your arugula, edamame and oranges to a large bowl. toss with the dressing and taste to see if you need to adjust seasoning. plate the dish and top with crunchy lo mein noodles.
